You give a good example with the piano lab. At my school, we are considering turning the piano lab into an electronic music lab. We are conflicted because we must examine why we have the lab- to teach piano or to explore electronic music?

I think that it would be very easy to fall into the trap of playing around with programs rather than learning keyboard skills- we will have to consider very carefully the scope, sequence, and curriculum of our electronic music program!
